Recipes!

Here they are!

Souffles
3oz butter (softened)
3oz flour
10oz milk
5 egg yolks
6 egg whites
3oz sugar
6oz semi-sweet chocolate

Mix butter and flour together in a bowl with a wooden spoon. Bring milk to boil; take off heat. Add flour mixture to milk (a little at a time) while wisking. Thicken on stove, then let it cool. Add melted chocolate. Add yolks one-by-one. Whip egg whites with pinch of cream of tartar; gradually add sugar. Whip to soft peak. Fold 1/3 of whites into base, then gently fold in remaining 2/3. Spoon mixture directly into middle of buttered and sugared ramekins. Do not pipe in mixture or smooth the top before baking! Bake at 375 degrees for 20 minutes. Enjoy!

Truffles
1 part heavy cream
2 parts semi-sweet chocolate

Bring cream to a boil. Put chocolate in a bowl. Pour cream over chocolate, cover with plastic wrap for a couple of minutes. Stir together until all of the chocolate melts. Refrigerate overnight. Scoop into balls and roll in favorite topping (ideas: coconut, cocoa powder, ground pastachios, ground almonds)
